Kia-Orana, I am very new in the bakery business, my objectives is to better my french stick and roll products, and also hoping to expand in the hot bread market distribution of french stick rolls, buns, on a daily basis. Having a huge demand on hot bread for our local and tourism market, I am planning to move into a 7 day hot bread operation on the island of rarotonga, I want to know how can I possibly setup a small operation for hot bread baking on a clientel of 400 people a day marketing planning, I also need to know the size of oven that I must purchased and other equipments to fast track my business, on a daily basis 7 days a week.
